I believe that a good meal is best served in a beautiful, delectable, brilliantly conceptualised sequence. It has to start off with a mouthwatering appetiser, include a show-stopping main course, and end with a mind-blowing dessert.
I’ve learned over the years that the same principle can apply to beverages as well: It’s best to start off with something dry and light (a little something to whet one’s appetite), progressing to bigger and more robust beverages (preferably wine), and end with something delectably sweet.

That is what the wonderful people behind Wolfgang Steakhouse in Resorts World Manila are re-introducing: The art of enjoying perfectly made cocktails before a delicious dinner (or lunch, we don’t judge). Frequent travellers of New York may be familiar with the brand, and as the Managing Partner of Excello Restaurant Management Group Leina Bolinas put it, they are “(going) to great lengths to replicate the experience of the original.”

And what an experience: We were presented with six new drinks, each with a unique spin. There was Overthyme, a gin based drink with thyme (of course), strawberries, and an interesting addition of balsamic vinegar. There was also GNT, an aromatic take on a classic gin and tonic with the addition of nutmeg. Those wanting a healthier cocktail could have some turmeric infused Square Root, or the Lemongrass Mojito (lemongrass is known to have healing properties). They have also introduced the same “healthy” concept to their other drinks, like the Apple Cider Margarita, and the Newport Silk (a gin based cucumber concoction).

As mentioned, the cocktails were just starters. We were also treated to what we’ve defined as sliders “(with a) perfectly placed arrogance” (because they were so good, they didn’t need anything else in the bun). It could pair well with wine from their carefully curated selection (they’re one of the few places in town with New York wines!). Their well-versed General Manager, Travis Halverson, was kind enough to tour us around their cellar, showing me the much sought-after bottle Screaming Eagle (which costs about half a million pesos!).
Did this make me want another evening of a full course dinner, and drinks to match? With cocktails like those, absolutely.
