Outside The Box, Trivento Style

written by Gail Sotelo September 15, 2017

Just when I thought I’ve written all there is to write about Trivento Wine from Argentina, I was yet again surprised.

Backtrack: One of my most memorable wine dinners with the brand involved an unusual pairing of Argentine wines and gourmet Thai food. This was completely unheard of… Until we paired the green curry with the Trivento Reserve Torrontes. It was an excellent play on aromatics (having had their icon wine, the Eolo, was also an amazing treat).

Fast forward to the lunch we had in Château 1771 with Trivento’s winemaker, the charming Maximilliano Ortiz. He is the embodiment of a wine’s reflection of its maker in that his imaginative, relaxed yet uncompromising attitude (he can literally be quizzed on the minute technical aspects of his wine and he will answer each question) translated to how his wines were.

We had many favourites (I mean, who can resist the beauty of Trivento’s multi-awarded Reserve Malbec?), but here are our personal picks:

 Trivento Sparkling Brut

A gorgeous, refreshing, rounded take on a sparkling Pinot Noir, this pretty pink wine can be drunk alone (I can see myself serving this to my girl friends on a sunny Manila afternoon), or with the Butter-Baked Oysters we had during the lunch. The wine is not out in Manila yet, but I’m excited once it gets to our shores (I’m stocking up on this!).

Trivento Reserve Torrontes… With Banana Sundae

Normally, crisp aromatic whites like a Torrontes are reserved for pairing with food from the main course (such as the Hainanese Fish I had), but Cecile Mauricio (legendary Manila wine connoisseur and Château 1771’s resident sommelier) encouraged me to try it with the Banana Sundae. It was a match made in heaven. Again, most wine scholars would balk at this idea but trust us, it worked.

Trivento Reserve Chardonnay… With Mango Jubilee

The original pairing for this wine was the Centennial Chicken, which quite frankly worked like a charm. This experimental pairing was quite unusual but no less divine.

That said, there are so many ways to pair wine with food… All it takes is to think outside the box and be adventurous. Of course, it helps to experiment with beautiful wine like Trivento. Cheers!
